Almond Cookies

This almond flavored not too sweet cookie ,with the crunch from the crushed almonds is perfect for a evening snack, with a cup of hot chai.

Ingredients


  • 1 1/4 cups all purpose flour

  • 3/4 cup almond flour

  • 1/2 cup butter

  • 1 /2 teaspoon baking powder

  • 1/2 cup sugar

  • 1/4 teaspoon salt

  • 1 egg

  • 1 teaspoon almomd extract

  • 1/4 cup pulsed almonds

  • 12 whole almonds

Steps

  1. Preheat the oven to 350°F .

  2. Mix all purpose flour, almond flour, salt and baking powder and whisk well.

  3. Beat sugar and  butter in a mixer on medium speed till it is pale and fluffy.

  4. Add the egg and almond extract and beat till mixed well.

  5. Add the flour mixture and beat on low speed till well combined.

  6. Fold in the crushed almonds and combine well.

  7. Roll the dough to 1/4-inch thickness using flour for dusting , if required.

  8. Arrange the cookies on to a baking tray lined with parchment paper.  Place one whole almond on top of each cookie and press slightly. Make sure you have some gaps in between them.

  9. Bake for 12 minutes and cool on wie racks.
