Cold winter immune soup

During the cold winter season, this healing soup will keep you away from cold and cough. It is soothing to the body and has the benefits from different herbs.

Ingredients

  • 1 tablespoon olive oil

  • 1 small onion or 1/2 of a big onion

  • 5 ribs celery ribs

  • 2 big carrots

  • 6 cloves garlic

  • 2" piece ginger

  • 2 tomatoes

  • 1 1/2 litres water

  • salt to taste

Fresh herbs

  • a few sprigs holy basil

  • a few sprigs thyme sprigs

  • a few cilantro sprigs

  • 4 fresh bay leaves ( dried bay leaves can be used )

Dried herbs

  • 1 " piece galangal

  • 2 - 3 " piece licorice

  • 1 piece whole turmeric ( substitute 2 teaspoons powder or 2 pieces fresh turmeric )

  • a few slices or 1 big piece of astragalus 

Spices

  • 1 teaspoon cumin seeds 

  • 1 teaspoon pepper seeds

  • 1 tablespoon coriander seeds

  • 2 long pepper

  • 10 cubeb peppers ( tail pepper)

Steps

  1. Heat a pressure cooker or a heavy soup pot. 

  2. Heat oil and then add bay leaves.

  3. Add the vegetables and sauté the till all the veggies are coated with the oil

  4. Add the rest of the spices and the cilantro, leaving the thyme and holy basil. 

  5. Mix well. Add water and salt.

  6. Pressure cook till you see the steam being released. Simmer the stove for 5 mins.

  7. Once the pressure is released naturally, add the thyme and holy basil and close .

  8. Let it infuse for 5 mins with the stove off.

  9. Strain and serve.
