Frittata

Easy one pot and wholesome dish . Any choices of vegetables can be used.

Ingredients



  • 10 eggs 

  • 1 baking potato 

  • 10 - 15 spinach  leaves

  • 1 big tomato sliced

  • 2 finely chopped chillies ( Optional)

  • 1 big onion sliced

  • 5 Mini peppers sliced

  • Chives or Cilantro chopped fine

  • Salt & pepper

  • olive oil - 2 tbsp.

Steps


  1. Beat eggs with salt and pepper. 

  2. Heat a 10" cast iron pan . Keep the flame on very low.

  3. Brush the pan with oil. Slice the potato evenly and layer it on the pan . Seson with salt and pepper.

  4. Close and cook for 5 mins.

  5. Add the egg mixture. Spread the spinach leaves, tomato slices, onion slices and mini peppers. 

  6. Top with Chives or fresh Cilantro.

  7. Drizzle oil .

  8. Bake in a 350°F oven for 12 mins and  broil for 5 mins.
