Okra With Tomatoes
Okra is an excellent source of magnesium, potassium, folic acid and vitamin c.
Serve this warm, as a side dish with rice or bread.
Ingredients
2 tablespoons oil , divided
1 teaspoon cumin seeds(Jeera)
1 red onion finely sliced
1 lb okra , slit lenghtwise and cut into 1 "pieces
1 medium tomato vertically sliced into 16 parts
1 teaspoon turmeric powder
1 teaspoon chilli powder
Salt to taste
1/4 cup fresh grated coconut (optional), can use dried grated coconut
Steps
Heat 1 teaspoon oil in a large skillet . Add half of the okra and sauté till it loses the sliminess and turns into a darker shade of green . It takes about 4 to 5 mins. Transfer it into a plate , and repeat the same process with the rest of the okra. Keep aside. At this point the okra will be cooked 25 percent.
To the same skillet , add the rest of the oil . Add cumin seeds and let it sizzle. Once you get a nice aroma , add the onions and keep stirring it till it is 3/4 th cooked.
Add the okra, that has been sautéed. Stir fry for 5 mins till it is cooked and the onions are soft.
Add the turmeric powder, chilli powder and salt to taste. Mix well.
Add the tomato, and keep sautéing it tfor 5 mins till the tomatoes start to break and the skin peels off. Remove the skins with tongs.
Add the coconut and toss it well.
