Quesadilla

Simple and easy snack, great for kids.

Ingredients


  • 8 Tortilla 

  • 3 Peppers

  • 1 medium onion

  • 2 cups sliced mushrooms 

  • 6 Eggs 

  • 1/2 cup chopped cilantro 

  • 5 tablespoons olive oil 

  • 2 tsp taco seasoning 

  • Salt & Pepper - to taste

Steps

1. Heat a Saucepan. Add 1tbsp oil . Saute onions and mushrooms on high flame with little salt and pepper for 2 mins.


2. Remove into a plate , add 1 tbsp oil and saute the sliced peppers for 2-3 mins with salt and pepper, till slightly charred and still crunchy.


3. Remove. Add 1 tbsp oil and scramble the eggs with salt and pepper till soft .


4. Heat a cast iron griddle. add 1 tsp oil . Lay one tortilla, keep on very low flame till you top with all the ingredients.


5. Layer the veggies, add scrambled eggs on top, then add cilantro, cheese , taco seasoning. Top with tortilla. Keep a bacon press or a heavy pan to press it down.


After a couple of mins flip and cook on the other side till crisp and brown.
