Raw Mango Drink

A refreshing summer drink made from unripened mangos. 

Ingredients

  • Raw - 1 big or 2 small cut into halfs

  • Holy basil sprigs - 4

  • Mint sprigs - 4

  • Ginger - 2 "

  • Long Pepper - 4

  • Rock Candy -  according to taste.

  • Palm Candy - according to taste

  • Cardamoms- a few

  • Fennel seeds - 1/2 tsp

  • Black salt - 1/4 tsp or normal salt.

Steps

  1. Bring 1 litre of water to boil in a pressure pan or in a saucepan.

  2.  Pound the cardamom, crush the ginger and add this to the water.

  3. Add the raw mango cut into half (and the seed too),   the long pepper, fennel seeds and close and cook till soft. If using pressure pan , cook tillyou hear the steam.

  4. Once the steam is released, strain the liquid and reserve it. 

  5. Scoop the flesh out of the mango into the strained liquid adding a little water .

  6. Bring the liquid to boil. add the salt and sweetener and stir till dissolved.

  7. Switch of the stove. Add the mint and holy basil and let it infuse for a couple of mins.

  8. Strain and serve over ice.
